Tapahtuman perustivat Fenalco Atlantico ja Kolumbian Punaisen Ristin Atlantic Section vuonna 2008, ja sen ensisijaisena tavoitteena on edistää Kolumbian Karibian keittiötä ja kulinaarisia kulttuureja.
